β A series where weβll share with you something that might be uncommon where you live, but is in fact, oddly common in Vietnam. Letβs all forget about phα», Γ‘o dΓ i, and nΓ³n lΓ‘ for a moment and allow us to introduce a newer side of Vietnam to you.Β
Hello again from Vietnam! Returning this week is the topic: The art of bitterness, but what exactly is it?
Given the abundance of coffee, Vietnamese people have adopted various methods to elevate its sophisticated bitterness. How? Let us show you in just a moment.
1. βCΓ phΓͺ vợtβ β Mesh-filtered coffee
Besides the metal coffee filter you may have seen somewhere, we also use fabric mesh as a filter. But what difference does it make?
As the coffee ground experiences friction each time it goes through the mesh strainer, the more times it is strained through the net, the more fragrant and flavourful your final cup of coffee will be. Along with that, mesh-filtered coffee also often requires the barista to soak the coffee for a longer time before brewing than other methods do.
Therefore, in the middle of the hustling Saigon, we highly recommend you be patient to get a taste of this slow art of bitterness.
2. βCΓ phΓͺ muα»iβ - Salted coffee
To soothe the bitter taste of coffee, various ingredients can be used. We usually see milk, cream, or sugar. However, have you ever heard about salt in this mixture?
Adding salt to coffee is truly a one-of-a-kind Vietnamese twist. A cup of salted coffee is a combination of silky smooth condensed milk, slightly bitter coffee, fresh milk, and refined sea salt.
At first, the salty taste might not seem to fit in a cup of coffee. But in fact, it accentuates the flavour, mediates the harsh bitterness of coffee, and enhances the sweet fragrance of milk. Are you willing to give this drink a try?
3. βCΓ phΓͺ trα»©ngβ - Egg coffee
If sweet and salty arenβt your jam, how about some creamy eggy flavour for a change?
The recipe for egg coffee dates back to 1946 β when milk was still a luxury to have in your pantry. As a result, eggs were used as a substitute to ease the bitterness of coffee.
More than just its unique flavour, egg coffeeβs specialness also lies in its fluffy texture. Owing to its thick, cloudy, silky smooth texture, instead of hastily drinking it right away like regular coffee, you should sip slowly with a spoon to enjoy it to the fullest.
